About the Coffee
This coffee comes from El Jaragual in Colombia’s Antioquia region, where innovation meets meticulous craftsmanship. Produced from carefully selected Castillo cherries, this lot showcases how modern processing techniques can elevate a familiar variety into something truly extraordinary.
Only perfectly ripe cherries are handpicked before being floated to remove any defects. The coffee then follows a carefully orchestrated Thermal Shock process, beginning with controlled oxidation and dry pulping before a second oxidation stage removes the remaining mucilage. A 72-hour fermentation with selected yeast cultures develops remarkable aromatic complexity, while a final chilling wash locks in freshness and clarity. Slow, temperature-controlled drying preserves every delicate layer of flavour.
The result is a coffee that is vibrant, expressive and beautifully balanced—an exceptional example of how precision processing can reveal entirely new dimensions in the cup.
