About the Coffee
This washed coffee comes from Pitalito in the Huila region of southern Colombia, one of the country’s most celebrated coffee-growing areas. Farms here sit at 1,650–2,150 metres above sea level, where the cool mountain climate allows cherries to develop slowly, building sweetness and complexity.
Producers in the region cultivate varieties such as Caturra, Castillo and Variedad Colombia, combining traditional flavour profiles with resilience in the field.
After harvesting, cherries undergo dry fermentation before washing, followed by careful drying on rooftops and traditional casa elba drying beds. This slower drying method helps preserve the coffee’s clarity and structure while maintaining its natural sweetness.
