About the Coffee
This coffee comes from Ricardo Vargas and his family farm in Ecuador, a project built from years of learning, patience and careful attention to detail. Although Ricardo’s coffees have been on our radar for several seasons, this is the first year we’ve been able to secure a lot to share.
The farm covers 15 hectares, with 7 dedicated to coffee cultivation under shade trees. Ricardo and his wife established the farm in 2014 after learning coffee production from Ricardo’s late father-in-law, whose experience and agronomic approach helped shape the farm’s philosophy from the very beginning. The farm itself is named in his honour.
From cherry selection to drying, every stage is handled with precision and intention. Ricardo closely monitors fermentation using temperature, humidity and brix measurements to maintain consistency and clarity in the cup. Drying takes place slowly over several weeks, allowing the coffee to stabilise naturally while preserving sweetness, structure and complexity.
Alongside producing high quality coffee, the farm also creates employment opportunities within the local community — something deeply important to Ricardo and his family.
In the Cup
Bright red currant acidity is balanced by soft honey sweetness and the sparkling freshness of ginger ale. Juicy fruit and delicate florals give way to a clean, elegant finish with subtle warmth and complexity.
