About the Coffee

This coffee comes from smallholder producers in Jalapa, Nueva Segovia, a mountainous region in northern Nicaragua close to the Honduran border. Coffee here grows at 1,350-1,650 meters above sea level, where cooler temperatures and higher elevations help develop dense, complex beans.

Some of the farmers contributing to this community lot include Cleofe Cruz, who grows Caturra at 1,637 metres, and Efrain Roque, cultivating Catuaí at around 1,350 metres. Alongside coffee, they grow plantains as a secondary crop, providing both food and natural shade together with Inga and native forest trees.

After harvesting, the cherries undergo 36-48 hours of dry fermentation, followed by washing and careful drying on shaded raised beds to preserve clarity and structure in the cup.

A bright and aromatic cup with notes of lemongrass, green grapes and pomelo, lifted by a gentle touch of cardamom spice. Fresh citrus and green fruit bring vibrancy, while the spice adds warmth and depth.
